Such an AMAZING experience! I got to De Librije early for lunch so Jonnie Boer (chef de cuisine) took my order personally, and later Thérèse (maître and sommelier) shared #DanielHumm new book! She’s such a sweetheart. The book made me think… when is Jonnie and Thérèse gonna share their autobiography? What were their defining lessons? What were their challenged them? What propelled them?
The restaurant is located in the former library of a 15th-century Dominican abbey, hence the name "De Librije”. It's ranked 34th in the 2017 list of top 50 restaurants in the world. The tasting menu allow one to select four of their seven courses. My selections were goose liver, venison, rabbit kidneys and pigeon (and just between you and me, pigeon is the "in" food right now) Jonnie added the three remaining courses. He added ceviche-style langoustine w/ lemon grass and seaweed and sole soaked in butter and juniper berry w/ tulip root, plus for dessert beet rose with sorrel ice cream.
