What to expect when dining at DiverXO? A meal and atmosphere that provokes, challenges, and entertains.
Chef Dabiz Muñoz and the team at DiverXO are on a trajectory to No. 1 on World's 50 Best List. They are currently at No. 4 up from No. 75 in 2019 up 71. Now the question isn’t if DiverXO will reach No. 1, but when.
From my observation to be on the top 50 list there has be mind-bendingly delicious food, exquisite wine pair that compliments every dish and impeccable hospitality, plus at least one more distinguishing element such as the chef’s personality, the location and facility of the resturant, the decor, perhaps a fresh vegetable and herb gardens outside, etc. DiverXO had the requisite extra element: Chef Dabiz Muñoz unrelenting curiosity and larger-than-life personality. He is at the top of his game and it shows.
Memorable dishes: 1) Thai green: really nice to taste the spice, typically tasting menus shy away from spice; 2) fried egg and blood sausage exploded with a burst of flavors in my mouth, a pleasant surprise; 3) red tuna w/ tomato had the boldest pair, but it worked; 4) the peppermint in the pil-pil cuttlefish was a pleasant surprise; and 5) only struggle was the frozen salad, it was a bit of a stretch. 😀
