Asador Etxebarri is all about the fire and grill. The smokey flavor of the food has been etched in my taste buds. I think about this meal often. Basque chef Victor Arguinzoniz is famous for being able to grill virtually anything and for coaxing out incredible flavors from seemingly simple ingredients. Despite a stellar 30-year career, the chef has remained as humble as he was on his first day in the kitchen. He does most of the grilling himself to retain control.
